The Latest from the Food Technology Faculty

The Food Technology faculty has been very busy with the students approaching their studies with great enthusiasm.

The boys are becoming more confident and competent in their practical abilities. Year 9 are mastering working in a team and I hope parents are being treated to some of the recipes from school being made at home. Year 10 have studied “Food and the Australian Identity” and they have undertaken a culinary journey across the globe, preparing dishes including Kangaroo and Crocodile Kebabs, Baked Spring Rolls and Cottage Pies.

 

 

Year 11 have just finalised the Food Quality unit and are improving their presentation techniques. They recently participated in a workshop with Sharyn from Cake and Plate. They decorated cupcakes with buttercream and fondant, using a sporting theme. It was a fun-filled afternoon allowing the boys to show their creativity. The boys also prepared a “Big Breakfast” highlighting the functional properties of foods.

Year 12 have studied units relating to Food Manufacturing and Food Product development. We were fortunate to utilise local businesses to expand on what we have done in the classroom. The boys travelled to East Coast Beverages and Grace Springs Farm. Both of these venues provided the boys with informative insights into operating a business within the Australian Food Industry. Mrs McDonald was pleasantly surprised that one of the guides for our East Coast excursion was an ex-student, Daniel Ambler, who coincidently also studied Food Technology for the 2005 HSC.

East Coast Beverages is expanding and they are currently producing 330,000 litres of juice weekly. The boys experienced firsthand the production of various juices, as well as learning about the bottled water industry. We are grateful to the Lentini Family for supporting our annual visits. Grace Springs Farm is an ethical producer of poultry products and meats. They ensure their animals are treated with respect and advocate for Snout to Tail eating. They sell direct to the public at Avoca Beach markets, as well as supplying local cafes.

Hospitality students continue to improve on their mis-en-place and practical skills. Both Year 11 classes had successful work placements, with many students gaining part time jobs.

Mr Bridge, Mr Massey and I would like to take this opportunity to wish the Year 12 classes all the best for their upcoming Trial HSC examinations.
